Chicken Fajitas


  • 3/4 pound boneless, skinless chicken breasts, cut into 2-inch strips
  • 1 tablespoon chopped fresh garlic
  • 1 tablespoon fresh lime juice
  • 2 teaspoons olive oil, divided
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Vegetable oil cooking spray
  • 1 medium onion, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 medium green bell pepper, thinly sliced
  • 1 can (14.5 ounces) diced tomatoes with green chiles, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 whole-wheat tortillas (8 inches each)
  • 4 tablespoons salsa, divided
  • 3 tablespoons chopped fresh cilantro, divided
  • 4 teaspoons nonfat plain Greek yogurt
  • 2 radishes, thinly sliced (optional)
  • 1 lime, cut into wedges (optional)

Heat oven to 400°F. In a bowl, toss chicken with garlic, juice, 1 teaspoon oil, chili powder and cumin; marinate 20 minutes. Coat a rimmed sheet pan with cooking spray; add chicken with marinade, onion, bell peppers, tomatoes with chiles, salt, black pepper and remaining 1 tsp oil; toss to combine. Roast, stirring once, until chicken is cooked through, 20 minutes. Wrap tortillas in foil; heat in oven during last 10 minutes of roasting time. Stir 2 tablespoons salsa and 2 tablespoonscilantro into chicken mixture; divide evenly among tortillas, along with remaining 2 tablespoons salsa, yogurt and remaining 1 tablespoon cilantro. Garnish with radish slices and lime wedges, if desired.

Last night, President Barack Obama once again made history by winning re-election against Republican nominee Mitt Romney.

The race to the finish line wasn’t as close as so many political pundits anticipated, as Mr. Obama swept states like Ohio, Virginia, California, Iowa, and possibly, Florida (once all of the votes are counted), for a total of 303 electoral votes versus Romney’s 206.

When it became clear that the electoral college numbers were in favor of the President, many news networks began to call the election as his, but it took the Romney campaign an additional hour to finally concede its loss, as they reviewed the Ohio and Florida votes. Afterwards, Romney officially called Mr. Obama to concede the race and offer his congratulations. Then, he gave his concession speech at his campaign headquarters in Boston in front of a mostly silent, yet still supportive crowd.

About half an hour past midnight in the Midwest, the President finally took to the stage, with his wife, First Lady Michelle Obama, and daughters Sasha and Malia in tow. The victory speech that followed was realistically inspiring, as the President hit his preacher stride with remarks like:

“I believe we can keep the promise of our founders, the idea that if you’re willing to work hard, it doesn’t matter who you are or where you come from or what you look like or where you love. It doesn’t matter whether you’re black or white or Hispanic or Asian or Native American or young or old or rich or poor, able, disabled, gay or straight, you can make it here in America if you’re willing to try.”

The infamous video of a Cleveland bus driver delivering an unforgiving uppercut to a violent woman passenger made its rounds on the Internet a few weeks ago. After the controversy surrounding the incident died down, the Greater Cleveland Regional Transit Authority has decided to fire the driver and file charges against both him and the woman.

The driver, Artis Hughes, has been fired from his job today, which he held for over 22 years, because RTA determined he did not follow protocol by diffusing the situation. According to

Greater Cleveland Regional Transit Authority spokeswoman Mary Shaffer confirmed that Hughes, a 25-year veteran of the RTA, was fired this morning for violating the rules of conduct.

“The employee handbook says an employee can be discharged if he uses overt force, strikes … a member of the public,” she said. “We understand he feels that his actions were in self-defense, but we disagree. The appropriate action should have been to pull over the bus and alert transit police and let them handle it.”

For his part, Hughes (who has been charged with assault) expressed disappointment with the RTA’s decision, saying he felt betrayed by the company for not supporting its drivers. At a press conference earlier today he said, “I’ve run over those events in my mind 1,000 times and I don’t know what I could have done differently.”

As for the woman, 25 year old Shi’ Dea Lane, she has been charged with disorderly conduct.
